Vegetables are incomplete without potatoes. Children love to eat potatoes. Kurkure Aloo is a very good breakfast, you can eat it comfortably with tea, with roti, with lentils and rice. It is very easy to make.

Wash the potatoes and cut them into long, thin pieces.

Heat oil in a pan, add cumin and asafetida, when cumin turns brown, then add chopped potatoes to it. Shallow fry them on medium flame while stirring continuously.

When the potatoes become crispy and golden brown, then add salt and all the spices and mix. Cook for 3 to 4 minutes. After adding kasoori methi, switch off the gas.

Add lemon juice to this. Serve garnished with green coriander leaves.
