No- Bake Blueberry Biscuit mousse cake

No- Bake Blueberry Mousse Cake is a Scrumptious delectable treat for Christmas and New Year. This Mousse cake can be made ahead of time and one can enjoy the Festival.All you need for this recipe is digestive biscuits for the base, cookie cream chocolate bar for a layer filled with Blueberry fruit filling and non dairy whipping cream,corn starch and a hint of vanilla for the mousse. Finally garnish with mint leaf and glazed cherries.

Recipe Notes

Powder biscuit for the base of the cake and for the mousse break the biscuit into small pieces.Add corn syrup as mentioned. Spread mousse evenly with a spatula and cover with the cling film well.

Methods
  • 1. Take 100 gms of Nutri choice Digestive biscuits and make into pieces. Grind the biscuits into powder in a mixer grinder.
  • 2. Transfer biscuit powder into a bowl and add melted butter and mix well. Line a parchment paper in a cake tin and fill the base evenly.
  • 3. Level the base biscuit mixture with the help of a offset Spatula or a katori.
  • 4. Arrange cookie cream milk chocolate bar above the biscuit base.Fill in Blueberry fruit , filling in the center of the empty space.
  • 5. In a non grease bowl,add non dairy whipping cream and whip to soft peaks. To it add corn syrup and whip until it combines well with the whipped cream.
  • 6. Corn starch helps to stabilize cream well.Add in vanilla extract and mix gently.
  • 7. Add biscuits pieces (100 gms) and mix well.Finally add Blueberry fruit Filling and gently mix until all the ingredients are mixed well.
  • 8. The Blueberry Biscuit cake mix is ready. Fill the mixture to the brim of the cake tin and level the surface.
  • 9. Cover the biscuit cake with a cling film and freeze it overnight for 8 to 9 hours.
  • 10. Remove the cling wrap and garnish with glazed cherries,mint leaves and blueberry fruit Filling. No bake Blueberry Biscuit Mousse Cake is ready to devour.
