Ingredients For Veg. Minestrone Soup Recipe

Methods
  • 1. Put a pan on medium heat add olive oil, add chopped garlic saute for 30 seconds
  • 2. Add chopped onions and celery saute for 2 min, now add diced carrot and some salt cook it for 2 minutes. Till it soften a bit
  • 3. Now add the cannellini beans and mix. Add the crushed tomato and also Italian seasoning.
  • 4. Add vegetable broth and mix it well. Add elbow pasta, stir and cover the pan let it simmer for 5-6 minutes
  • 5. Open the pan and add chopped spinach, black pepper powder and grated parmesan cheese. Mix it well and cover the pan again.
  • 6. Cook it for 5-6 minutes till your pasta is cooked.
  • 7. Serve it with parmesan cheese and enjoy your veg minestrone soup.
