Wheat Flour Nankhatai Recipe

Nankhatai are popular Indian Shortbread Cookies or biscuits that are made using flour, sugar and ghee with flavour of cardamom powder or nutmeg powder and are also popular tea time cookies which can be easily made at home. There are many variations of Nankhatai.

Recipe Notes

Make sure ghee is at room temperature (looks white in colour) and not melted.Just gather together all the ingredients to form dough. Do not knead the dough more like roti or bread dough.

Ingredients For Wheat Flour Nankhatai Recipe

Methods
  • 1. Mix wheat flour, semolina, besan, salt, baking powder and cardamom powder and keep aside.
  • 2. In another bowl take ghee and beat well in one direction till it becomes soft and fluffy. Add half of the powdered sugar and again beat well. Add rest of the powdered sugar and beat well till mixture becomes soft and fluffy.
  • 3. Now gradually add flour mixture and mix well to form dough. If needed add 1 to 2 tsp of milk or fresh curd. Knead dough and divide in 12 equal parts.
  • 4. Make balls from it, press little with palms and keep in baking tray lined with butter paper. Keep one almond on each ball.
  • 5. Bake in an preheated oven for about 20 to 25 minutes at 200 degrees celcius. Time and temperature may vary depending upon the oven you are using.
  • 6. Remove from oven and allow it to cool completely. Keep in an airtight container and enjoy.
