Aatte Ka churma recipe

Rajasthani Churma Churma, a traditional Rajasthani sweet typically served along with Dal-Bati, is prepared by grinding or crushing baked or deep fried Bati into fine powder using a grinder and then thoroughly mixing it with melted ghee, sugar and dry-fruits. With the exception of salt not being added in the dough, Bati (aka Baati or Batti) for both Dal Bati and Churma is prepared in same way by either baking it in oven or deep frying it in Ghee or cooking oil. Methods
  • 1. Mix all the ingredients for the dough and mix well (I have added pinch of turmeric powder for golden colour of churma which is completely optional) Add water little at a time and knead a soft dough. Make three portions of our it. Bind them roughly in your palms.
  • 2. Heat one cup ghee in a wok, fry ready muthiyas on low to medium flame form all sides. Take out on a kitchen towel. Break them into roughly pieces and let them cool completely. Now grind them to a fine powder into a grinder.
  • 3. Now add sugar and cardamom powder and mix well. Add ghee and mix well, garnish with chopped dry fruits and dry rose patels. So here Rajasthani traditional Churma is ready to go.
