1.
Firstly, combine together all the ingredients except maida, oil and salt to make the filling for the paratha. Set aside. We will add salt to the filling just before stuffing the parathas in order to avoid release of excess moisture.
2.
Now, take maida/ atta ( I have used maida). Add salt, a teaspoon of vegetable oil. Gradually, add water and prepare a soft dough. Rest the dough for 15 minutes.
3.
After 15 minutes, make 8 equal sized balls from the dough. Roll out 2 portions of the dough into around 5 inch diameter roti using little wheat flour for dusting if necessary.
4.
Place one rolled roti on a clean and dry surface. Place stuffing evenly over it . Cover it with another rolled roti and seal the edges properly. Heat up a tawa on medium heat. Roast the paratha till golden brown spots appear on both sides using oil/ghee. Likewise prepare all the paratha.
