STUFFED BRINJAL CURRY RECIPE

There are many variations to prepare stuffed brinjal , I have made these brinjal with tasty tales Amritsari mutton curry. Eggplants or brinjals are very good source of dietary fibre, vitamin B1 and copper. It is good for children’s growth and development.

Eggplants has to be small in size and tender. Adjust the spice level of the curry as per your taste.

Ingredients For STUFFED BRINJAL CURRY RECIPE

Methods
  • 1. Wash eggplants properly. Slit each one partially, keeping the stem intact.
  • 2. In a mixer jar add all the ingredients of dry stuffing . Grind it well . Stuff each brinjal with dry stuffing.
  • 3. Heat a pan add 2 tbsp oil. Shallow fry the brinjals, on low medium heat , Cover the lid . When it becomes soft remove it from pan.
  • 4. In same pan add 1 tbsp oil, heat it. Add onion and garlic , Saute it for 3-4 minutes. Add chopped tomato , saute for 2 minutes. Finally Add tasty tales amritsari mutton curry paste. mix it well . Cook it for 2-3 minutes,
  • 5. Add fried eggplants in it. Gently coat the masala over it.
  • 6. Cover it with lid. Add water to adjust consistency.
  • 7. Cook it for 3-4 minutes on low medium heat. Turn off the flame. Add lemon juice.
  • 8. Garnish it with chopped coriander leaves. Serve with Paratha / chapati.
