Thayir vadai is the south indian variation of dahi vada.I always try to new recipes.Here I am presenting an innovative variety of Thayir vadai with saffron flavoured curd and gram flour balls. This is my innovative dish.Perfect recipe for party or snack.

Methods
  • 1. Soak 1 cup urad dal in water for 2 hours. drain off the water and transfer to a mixi or grinder. blend to smooth thick and fluffy batter adding 1-2 tbsp of water.
  • 2. Transfer the urad dal batter to a bowl. Beat in one direction for 2 minutes or until the batter turns smooth and fluffy. Now add green chilli, pepper, and salt.
  • 3. Combine and beat for a minute. Now dip your hand in the water, and start dropping them one by one to hot oil. Keep the flame in lower to medium stir occasionally. Also, fry the vada till they turn golden brown and crisp. Drain off the vada on to kitchen towel to absorb oil.
  • 4. Drop the vada into large bowl and pour 4 cup hot water. Dip and rest for 10 minutes. this helps to make vada soft and juicy. Once the vada is soaked well, squeeze gently and keep aside.
  • 5. In a bowl take 2 cup curd, 2 tbsp sugar and 1/2 tsp salt. Whisk well to have smooth flowing consistency curd. Now put the vadas it in the curd mixture. Let the vada soak in curd mixture for 30 minutes
  • 6. In another bow take 1 cup of curd with 1 tsp sugar,saffron, salt, and whisk well. keep it aside.
  • 7. For gram flour balls:Mix besan and salt in a bowl, Add enough water to make it thin batter. Heat oil in a pan, and sprinkle the besan water in hot oil and drain the balls on kitchen paper.Keep it aside.
  • 8. Heat a pan add 2 tsp oil and splutter mustard,dried red chilli and switch off the stove
  • 9. For serving: Place the vadas in serving plate. Add tempering on the vadas.sprinkle some red chilli powder.Place some gram flour balls.Spoonful of saffron flavoured curd.Garnish with coriander leaves.
