This is a north Indian delight. This healthy recipe is a perfect side dish. It's flavourful and lip-smacking. The capsicums are stuffed with spicy paneer and potato fillings and baked in oven.

Ingredients For TRICOLOR STUFFED PANEER CAPSICUM Recipe

Methods
  • 1. Cut the green capsicums. Cut off the tops and deseed them. Keep aside.
  • 2. Boil potatoes and carrots. Mash them separately and keep in separate bowls.
  • 3. Heat oil in a pan. Add cumin seeds to crackle. Then saute chopped onion and fry it till slightly brown.
  • 4. Then add green chillies, mashed potatoes and grated paneer. Add the spices, chilli powder, dry mango powder, garam masala powder and salt.
  • 5. Mix them properly and remove from heat.
  • 6. Saute the mashed carrots also with salt and keep aside.
  • 7. Now start filling up the capsicums with prepared paneer mixture. Fill the center with carrot mixture.
  • 8. Brush the filled capsicum with oil and arrange them on a baking tray.
  • 9. Pre-heat the oven at 160°C. Bake it for 20 minutes.
  • 10. Garnish the paneer part with desiccated coconut to give it tricolor look with orange carrot filled center followed by white and then the green capsicum part.
  • 11. Delish the tricolor stuffed paneer capsicum!!
