UNDHIYU RECIPE

Undhiyu is a Gujarati mixed vegetable dish that is a regional specialty of surat, Gujarat, India. The name of this dish comes from the Gujarati word “undhu “ which translates to upside down, since the dish is traditionally cooked upside down underground in earthen pots, termed “ maltu “ which are fired from above.

Ingredients For UNDHIYU RECIPE

Methods
  • 1. Mixed everything and make dough and make, a muthiya oval shaped or round shapeand fry them properly.
  • 2. Take a baby potatoes and peel them and make a two halves fry till golden brown
  • 3. Take a sweet potato peel them and cut into rounders and fry them till golden. Now take a ratalu ( purple yum) make big cubes and fry till golden , Take a papdi, carrot, tuvar Dana , green peas remove stem and peel separate into and pressure cooker 1-2 whistle
  • 4. Now take a pan add oil. Add hing , whole red chili sauté it add garlic green chili paste and mixed it. Add chopped tomatoes and sauté it. Add red chili powder, turmeric powder, salt, coriander powder, garam masala, sugar , lemon juice, sweet chutney and mixed it and sauté it till oil comes up.
  • 5. Now add all all vegetables and mixed it add pressure cooker vegetable and mixed sauté 2 minutes
  • 6. Add Methi muthiya mixed it.
  • 7. And cook it 5-7 minutes on medium flame.
  • 8. Served it with puri.
