White chocolate mango sandesh truffle recipe

Mango sandesh is a traditional sweet of Bengal. I have added a twist to it by adding white chocolate and making truffles out of the mango sandesh.

Ingredients For White chocolate mango sandesh truffle recipe

Methods
  • 1. Firstly, peel the mango and chop them into small pieces. Blend the mango into smooth puree and make sure there are no lumps.
  • 2. Now, boil milk over medium flame and add lemon juice. One milk starts to curdle, stop adding lemon juice. Strain the chenna from the whey and tie it with a cheesecloth to drain excess liquid. 
  • 3. Using your palms, mash the chenna till it turns smooth. In a pan, mix the mango puree with sugar and keep cooking in low flame. Once it turns jelly like, add the mashed chenna and mix. Next add the milk powder,  ghee and keep cooking till the mixture separates from the pan.
  • 4. Now place the mixture in a greased tray and let it set for 1 hour.  After that,  cut them into square shaped. They are ready to be eaten as delicious mango sandesh.
  • 5. But now comes my twist.  Melt white chocolate in double boiler and add butter. Shape the mango sandesh into round truffles and coat them with the melted chocolate. Let them cool and the chocolate will set. Drizzle mango sauce. Garnish with chopped pistachios and mango and serve chilled.
