Recipe Notes

1. Dough should not be soft.2. During frying oil should not be too hot.3. By keema stuffing you can make keema samosa. 4. Adjust the spices as per your taste.

Ingredients For Aalu matar Samosa Recipe

Methods
  • 1. Roughly crumble the potatoes. Heat 1 tbsp oil in a wok, add cumin seeds. Add ginger, green chilli in it . Saute for few seconds. Add green peas Saute for 3-4 minutes. Add all the spices. Mix it well .
  • 2. Add potatoes . Mix it with spices. Saute for 2-4 minutes. Turn off the flame, Add coriander leaves. Mix it. Stuffing is ready. Let it cool.
  • 3. Take a mixing bowl add all the ingredients of dough. Mix it well. Rub it with your palm.
  • 4. Mixture should be crumbled.
  • 5. Now gradually add water and make stiff dough. Keep it aside for rest.
  • 6. After 20-25 minutes again knead the dough.
  • 7. Take some portion from the dough. Roll it little thick in oval shaped by applying some oil . Cut it into half. Apply water on the plane part , join it to make cone. Press it to seal the cone.
  • 8. Take it in your hand . Fill the stuffing. Apply the water on other edges. Make a plate on back side. Bring the edges together and by pressing seal them.
  • 9. Make all the samosa by the same method.
  • 10. Heat oil. On luke warm oil deep fry all the samosas. After 5-6 minutes increase the heat into medium. Fry it until it becomes golden brown and crispy.
  • 11. Remove it in a kitchen napkin. Serve it with sauce/ chutney.
