ASIAN PEARL BARLEY SALAD RECIPE

Salads can be more than just raw veggies and bland flavours. You can blend various flavours, ingredients and combinations there's literally no boundaries to the variations. Let's celebrate veggies and bring out the most out of them!! This is an Asian inspired pearl barley salad with mushrooms, bokchoy, radish, chilli, onions and parsley. It is drizzled with an Asian dressing of soy sauce and vinegar!! It tastes so fresh and delicious.

Do not overcook the onions while sauteing the mushrooms.

Methods
  • 1. Soak barley overnight and boil until done. Blanch Bokchoy and shock it in cold water to prevent overcooking.
  • 2. Slice onions, mushroom and chilli. Finely chop garlic and clean bokchoy leaves.
  • 3. Add 1 tbsp of oil to pan. Add mince of 3 cloves of garlic followed by mushroom. Season with salt
  • 4. After a minute or 2 of cooking add sliced onion, chilli and 1 tsp of soy sauce. Cook for further 30 second ~ 1 minute.
  • 5. To a bowl whisk in oil, remaining soy sauce, vinegar, salt and mince of 1 clove of garlic. Whisk until emulsified completely.
  • 6. Add all the ingredients to a bowl, drizzle with vinaigrette and toss to enjoy your super healthy and delicious bowl of freshness.
  • 7. In the end top it off with parsley for added flavor.
