Ingredients For Daal makhni with kurkure kulche

Methods
  • 1. Firstly, soak the urad daal and rajma over night for 8 -9 hours in water
  • 2. Now , boil it in the pressure cooker till 14-15 whistles
  • 3. Now check the daal with fingers tip if it is easily mashed then it is done and if not then again close the cooker for 5 minutes .
  • 4. Now prepare the dough for kulcha , take maida in a bowl add baking soda , sugar ,salt .
  • 5. Now add oil for crisp in kulcha and curd and then add water as per required
  • 6. Now kneed the dough and keep it aside for 2 hours .
  • 7. For daal makhni , add butter in a pan heat it and then add Bay leaf , Cardamom, cumin seeds , cloves till the rosted fregrance comes out
  • 8. And then add chopped onion and fry till it becomes light golden and then add ginger garlic paste
  • 9. Fry till the raw aroma leave and then add tomato paste
  • 10. Add remaining ingredients like dry powders and fry for 2 - 5 minutes
  • 11. Add boiled daal and close the lid and keep it in medium flame for 5-6 minutes
  • 12. Then add little bit cream and then close then turn off the flame .
  • 13. Now heat the coal piece till it becomes red then place it in the daal and add some amount of butter upon it and close the lead for 10 minutes
  • 14. Now prepare kulcha from the prepared dough
  • 15. Serve daal add some cream and serve it hot with stuffed kulcha
