Do not fry the chicken directly after taking it out from the refrigerator, it will result in uneven cooking.

Methods
  • 1. Mix the buttermilk, red chilli, herbs, cardamom, garlic, egg and salt. Add the chicken and marinate it for 5 hours in the refrigerator.
  • 2. Take the chicken out 30 mins before frying. Make a dry batter from the maida, cornstarch , baking powder, chilli powder, coriander powder, black pepper and salt.
  • 3. Hammer the chicken pieces to flatten them before frying. Make sure the oil is heated properly, we don't want to chicken to be raw.
  • 4. Do not crowd the fryer or the chicken will not cook properly. We want a nice golden colour on the chicken.
  • 5. Now toast the buns with a little butter. Assemble the burger using the mint mayonnaise, lettuce, onion and tomato and of course the delicious crispy chicken.
