Mexican rice, red rice, or arroz rojo, is a Mexican dish made from white rice, tomatoes, garlic, onions, etc. It is traditionally made by sautéing the rice in a skillet with oil or fat until it is colored golden brown.

Ingredients For Mexican rice Recipe

Methods
  • 1. Heat the pan with butter in it. Then add ginger garlic paste and saute well
  • 2. Then add onion and fry till it tunrs soft
  • 3. Then add soaked basmati rice fry it well on medium flame for 2-3 mintues then add all chopped veggies( capsicum, spring onion,red bell pepper) cook well
  • 4. Then add tomato puree to it,mix it nicely then add chilli powder, Tomato sauce, chilli sauce,salt and mix well
  • 5. Now add 1½ cup water to it and cover and cook till rice is cooked nicely
  • 6. Then add chopped jalapeno, oregano,chilliflakes, corriander leaves and mix it nicely.
  • 7. Serve it hot with shezwan chutney and nachos.
