Millet Uttapam Sandwich Recipe

It's a protein packed millet breakfast with millet flour and ragi flour. It's a  nutritious and tasty breakfast. I also incorporated spinach and veggies to make it more healthy. The addition of millet flour makes it healthy, easily digestible and improves our immunity. This is perfect for nutritious tiffin box recipes.

Ingredients For Millet Uttapam Sandwich Recipe

Methods
  • 1. Mix millet flour, ¾ wheat flour, ¾ yogurt and salt to taste. Keep aside for a few minutes.
  • 2. In another bowl, mix ragi flour with ¼ wheat flour, ¼ yogurt and salt to taste. Keep aside for a few minutes.
  • 3. Heat a non stick tawa and drizzle a few drops of oil.
  • 4. Adjust the consistency of the two batters. If required, add water.
  • 5. Pour a ladle full of the millet flour batter. Spread it into circles and top with onion pieces, tomato pieces, chopped green chillies and coriander leaves.
  • 6. Roast till it turns crisp and slightly golden.
  • 7. In the same way pour and spread the ragi flour batter on the non stick tawa. Top with onion pieces, tomato pieces, chopped green chillies and coriander leaves. Roast till it turns golden and crisp.
  • 8. Now repeat the same process with the millet flour batter again and make the third uttapam.
  • 9. To assemble, first put the millet uttapam. Spread with chipotle spread and top with cheese slices.
  • 10. Then layer with the other millet uttapam and top with blanched spinach and chipotle spread. Finally, layer with the ragi uttapam on top.
  • 11. Microwave the whole layered sandwich uttapam in the preheated oven at 180° C for 7 - 10 mins until the cheese melts.
  • 12. Cut into pieces and serve with the choice of any sauce. Fill the tiffin box with the healthy millet uttapam sandwich.
