Fry the kachories on low medium flame only. After filling the stuffing make sure it should be properly packed.

Methods
  • 1. Take a big bowl, add all purpose flour, ghee and salt. Mix ghee in maida very well. You will get crumbled mixture.
  • 2. Now add water as per requirement and knead soft dough. Cover it .Let it rest.
  • 3. Take a mixture jar add the soaked moong lantils. Grind to a roughly coarse mixture.
  • 4. Heat 1-2 tsp oil in a heavy bottom nonstick pan. Add cumin seed , when it turns brown add all the spices ,roast for few seconds on low heat. Continuesly stir.
  • 5. Now add grinded moong dal. Mix it well. Roast it on low flame and stir continuesly.
  • 6. When it becomes dry turn off the flame. Transfer the stuffing in a plate . Let it cool.
  • 7. Take small portion off dough , make a small bowl from it , fill 1 spoon stuffing in it . Close from all the side . Gently press it with your hands. Fill all the Kachories by same method .
  • 8. Heat oil in a wok. Deep fry the kachories on low medium heat till it becomes golden brown and crispy.
  • 9. Serve it with green and tamarind chatni .
