Recipe Notes

Marinate the mutton overnight to make it soft and juicy .Do not overcook the fried onion paste, otherwise a bitter taste will come.Always use boiling water for good color and texture of the curry.You can use raw papaya paste to softeb the mutton pieces.

  • 1. Marinate the cleaned mutton pieces with with turmeric, chilli, cumin and coriander powders along with curd and 1 tablespoon oil. Put it into fridge and rest for overnight.
  • 2. For cooking, 1st heat the oil. Add bay leaf and whole garam masalas. Add fried onion paste, ginger - garlic- chilli paste, salt and saute.
  • 3. When raw smell goes off, add chopped tomatoes and fry it again. Now add marinated mutton into this.
  • 4. Mix it properly and cover it at low flame for next 10 minutes. Open the lid, mix it again, cook for 5 minutes at high flame. Again at low heat cover and cook for next 10 minutes.
  • 5. Repeat this process for 1hour. You can add small amount of boiling water when needed. The mutton will release some water while covered and cooked.
  • 6. After 1 hour add fried potatoes and give it a good mix. You can see the color will be dark and mutton will start releasing oil from sides of the cooking pan.
  • 7. Now add required amount of boiling water and wait a little to give it a boil. When it starts boiling, transfer it to a Pressure cooker.
  • 8. Close the lid and cook it in mid-low flame. Wait until 2 whistle comes. Then turn off the flame and wait for 15 minutes to cool down the entire syatem.
  • 9. Now open the lid, check if mutton is completely cokked or not. If it becomes tender, add garam masala powder and onion barista. Give it a stir and cover again and rest .
  • 10. If the mutton is not soft, give another two whistle and cover and rest.
  • 11. Serve hot mutton curry with rice or pulao.
