1.
Using a microwave safe bowl add the yellow pumpkin and water and microwave for 1 min.

Strain and allow the pumpkin to cool then mix in whipped yogurt, salt, sugar and jeera powder. Mix well.

Now take a frying pan add 1 tsp Olive oil, heat it then add the mustard seeds allow them to crackle then add the curry leaves and whole red chilli saute for a few seconds.

Garnish the raita with the above tadka and roasted peanuts.
