Recipe Notes

For tempering you can add green chilli and curry leaves too. You can make two separate layer of dhoklas and then spread green chutney over one dhokla layer then cover it with second layer.

Methods
  • 1. Drain the water , wash soaked rice and dal. Grind it well to make a smooth paste.
  • 2. Add hing and citric acid granules . Mix it well . Transfer it in a bowl. Keep it in warm place to ferment for 6-8 hrs.
  • 3. After 8 hrs , divide the batter in two bowls. Add salt, oil and baking soda ( in half quantity) and some water in one bowl . Mix it well .
  • 4. Pour it in greased dhokla plate. keep in pre boiled dhokla maker. Steam it for 5 minutes.
  • 5. Open the lid of steamer. Bottom layer set. Spread green chutney evenly. Steam it for 2 minutes.
  • 6. For top layer repeat the same process to make batter.
  • 7. Pour the batter evenly on chutney layer. Cover the lid. Steam it for 8-10 minutes minutes.
  • 8. Turn off the flame. Allow it to cool.
  • 9. In a tadka pan heat oil. Add mustard seeds in it when it starts to crackle add sesame seeds, turn off the flame. Pour this tadka over the dhokla . Cut it into the pieces, and enjoy
