Ingredients For Shalgam E Malpua Rabri Recipe

Methods
  • 1. For making purée of turnip, peel and wash them . Pressure cook for two whistles. Take out and let them cool. Now mash them with potato masher and strain the extra water out from it. Now blend it to a fine purée.
  • 2. In mixing bowl, add all ingredients except for Malpua and mix well. Now add milk 1 tbsp at a time and make the batter of pouring consistency. But little thicker than normal Malpuas.Take a pan, grease it with ghee and add ladke full of batter for making round shape Malpua.
  • 3. Flip the side and cook from both sides until gets golden color. take out the Malpuas on a plate.
  • 4. For sugar syrup: In a pan add sugar and water, stir until sugar gets dissolved. Boil for 5 mins. Add cardamom powder and turn off the gas, no need to reach any string consistency it should get little thicker.Add ready Malpuas in sugar syrup and let them soak for few Mins.
  • 5. For instant Shalgam E Rabri: Boil the milk in heavy bottom pan till it reduced to its half, add turnip purée to it and cook it for 10 mins.Grind the bread slices and dry roast them slightly.add them to the milk turnip mixture and mix well.
  • 6. now add milkmaid and mix well. Cook it on slow for 5 mins. Add chopped dry fruits and cardamom powder to it. Garnish with crushed dry rose patels.
  • 7. Plate the soaked Malpuas, topped with Rabri and serve hot or chilled as per choice with nuts over it.
