Sindhi brinjal Recipe

Brinjal that is also known ad eggplant or baigan is a very good source of iron. Every family has a different way of cooking brinjal. This is the authentic sindhi way of cooking brinjal. It is crispy and very tasty.

When you are adding the brinjals to the hot oil be careful as the oil will splutter a lot due to the water in the brinjals.

Ingredients For Sindhi brinjal Recipe

Methods
  • 1. Take 2 brinjals and cut them vertically into medium thick slices. Put them in salt water for 5 minutes.
  • 2. In a bowl mix red chilli powder, dhaniya powder, turmeric, jeera powder, salt and amchoor.
  • 3. Heat 5tbsp of oil in a sauce pan. Remove the brinjal from water press them to remove the water.
  • 4. Make slits on it with a knife and put them in the hot oil for shallow frying.
  • 5. After 2-3 mins flip them. Make sure the flesh doesn't burn.
  • 6. Once done take them out on a plate. Sprinkle the masala on the top and back. Make sure the top is coated well with the masala.
  • 7. Serve hot with roti or masala rice.
