Recipe Notes

• Do not make the batter very thin.• Keep the tawa hot while pouring the batter.• Do not cook the uttapam for long as cracks will develop.• Fresh curry leaves can also be used.

Methods
  • 1. In a bowl add suji, curd and mix well. start adding water gradually for making a thick but pouring consistency batter.
  • 2. Keep it for resting for at least 30 minutes. Meanwhile chop ginger and green chillies. Make powder out of the dry curry leaves.
  • 3. Add chopped Ginger, green chillies and curry leaves powder to the batter along with salt. Check its consistency and add water accordingly.
  • 4. Finely chop onion, tomato, capsicum and coriander leaves.
  • 5. Heat a tawa well and pour very little oil on it. Put one ladle full of the batter and spread. Do not spread very thin.
  • 6. Now top it up with onion, tomato, capsicum and coriander leaves. Pour some oil on this side and flip it. Cook both the sides till they become slightly brown.
  • 7. Serve it hot with your favourite chutney
