Recipe Notes

You can add veggies of your choice. If you dont want to use food colouring use spinach for green, turmeric for yellow, beetroot for red. Add lemom juice for added flavour.

Methods
  • 1. boil the rice and allow it to cool.
  • 2. In a vessel heat oil add the chilli paste,jeera and thinly sliced onion to it. Saute for 3 mins. Now add jullienes of cabbage and diced carrot,beans and capsicum.
  • 3. Add salt to them and cover them for 3-4 mins. After that add all the masalas(garam masala,red chilli,turmeric,dhaniya,jeera) and yoghurt. Mix it well and cover for 15 mins.
  • 4. Prepare the food colouring by mixing the colour powder in some water. Divide rice in three parts
  • 5. Colour the first part red,second green and let the third be white.
  • 6. Check the veggies. Remove some cooked veggies in a plate and keep aside.
  • 7. Now we will make layers. In the vessel leave some veggies
  • 8. add first layer of red coloured rice. Sprinkle some mint leaves on the rice and add veggies on top followed by the second layer of white rice. On top of white rice add mint leaves and rest of the veggies followed by the third and last layer of rice i.e green rice.
  • 9. Cover the vessel for 10-15 mins and apply pressure on the lid
  • 10. Serve hot with raita or papad
