I have alternative for the below ingredients: sugar(brown sugar or jaggery can be used), refined flour(whole wheat flour), blackcurrants can be avoided (if not available), fruit and nut muesli can be used.

Ingredients For Eggless Muesli Banana Cake Recipe

Methods
  • 1. Blend in ripe bananas and sugar. Keep aside.
  • 2. Pre heat the oven at 200°C. Grease the baking tin with oil and dust it well with flour. Set aside.
  • 3. In a big mixing bowl add in banana sugar mix, oil, buttermilk and mix until blended well.
  • 4. To the above mix, add muesli, dates, almonds, cashew, blackcurrants and mix in.
  • 5. Now, swift in refined flour, salt, cinnamon powder, baking powder and baking soda.
  • 6. Swiftly fold in the dry ingredients into the wet mixture.
  • 7. Once done, pour the above batter into the baking tin and tap well.
  • 8. Garnish the above ready baking batter with blackcurrants, sliced almonds and pistachios.
  • 9. Bake the above at 200°C for 30-40 minutes or until the toothpick comes out clean when inserted into the cake.
  • 10. Serve the cake once cooled.
