Mathura Wale Dubki Aloo

This is one of the most favourite breakfast options in the Brij Bhumi. Its completely vegetarian with no onion and garlic. It's simple yet has so many flavours in it. This is paired with Bedmi pours, Daal pooris, Plain Pooris or paratha. Its enjoyed specially during winters because of its aromas and hotness that gets imparted from the freshly groudned masala.

Ingredients For Mathura Wale Dubki Aloo

Methods
  • 1. Wash and peel the potatoes. Pressure cook to 2 whistles. Once the potatoes are boiled strainer the water and keep aside.
  • 2. Meanwhile make a fine smooth paste of coriander + green + lemon juice+ salt +ginger paste.
  • 3. Dry roast cardamom +cloves+cinamon and make a fine powder and keep garam masala aside.
  • 4. Dry cumin + dry red chilli and make a fine powder and keep aside.
  • 5. Now take the potatoes in flat bowl. Crush the potatoes into big chunks.
  • 6. Now add 80% of the coriander +green chilli paste. Now add black salt.
  • 7. Now add roasted cumin powder, fennel powder, black pepper powder and give it a mix.
  • 8. Now take a kadai. Add oil and let it heat. Add cumin seeds and hing. Let it splutter.
  • 9. Add 4-5cups of regular water into the kadai. Now add 1tsp + 1/2 tsp of fresh grounded garam masala and the rest of coriander green chilli paste. Let the it boil on high flame for about 3minutes.
  • 10. Add salt and honey and kashmiri red chilli powder into the boiling water. Let it boil for 2minutes more.
  • 11. Now add the masala mixed potatoes into the water and let it boil for 2 minutes. Now simmer for more 2-3mintues.
  • 12. Once oil separates on top switch off flame. Add the freshly chopped coriander leaves
  • 13. Serve hot with puris or paratha.
