Recipe Notes

Make sure that you make the puris of the correct thickness that is about 1/8 of an inch so that it is nice and crispy so that it is nice and crispy.

Methods
  • 1. Make a plain base dough with maida, salt, ajwain, ghee and very minimal water. Divide the dough into three parts and add palak puree, beetroot puree and turmeric powder to each of them
  • 2. Let it rest for 10 minutes. Now roll the puris in small circles, make holes and fry them on medium-low flame until crispy.
  • 3. Now take a cooker and add oil, cumin seeds,soaked chana dal(for 45 minutes),spices, green chillies, chopped mint and coriander leaves mix them well and cook it till it forms a luscious dal like consistency.
  • 4. Now it's time to assemble the dish- take the puris and serve it with some chutneys and chaat masala topped with coriander leaves.
  • 5. The dish is ready!I have served with cool and refreshing thandai.
