Ingredients For Surthi Undhyu Recipe

  • 1. Let's make Mutiya, take a bowl add gram flour, whole wheat semi crush flour, fenugreek leaves ,1/2 bowl fresh chopped green garlic ,sesame seeds ,pinch turmeric and baking soda,3 tsp green chsalt as per taste with 2 tsp oil ,2 tsp sugar powder, mix well n
  • 2. form a semi soft dough adding very little water. Make small mutiyas and deep fry till golden crisp.
  • 3. Take pressure cooker, heat 2 tbsp oil, add asafoetida, carom seeds turmeric and add all the pigeon peas and surthi papdi..add 2 cups of water and pressure cook for 2 whistles
  • 4. Now peel potatoes. purple yam, sweet potato and chop banana and deep fry till soft.
  • 5. Chop brinjal in four keeping it attached from the top.
  • 6. Now a make a spl Undhyu masala. Mix grated fresh coconut,coriander leaves, 1 cup green garlic chopped ,1/2 cup green chilli ginger garlic paste, 2 tbsp Undhyu masala ,salt ,fresh semi course groundnut and mix well
  • 7. Stuff the masala in brinjals and transfer 1 cup mixture on the fried vegetables,mixing well, keep them aside for 15 min.
  • 8. Now take huge kadai. Add 1/2 cup oil, use same oil used for frying mutiyas and vegetables, add red chillies, little green chilli ginger garlic paste turmeric and saute for few minutes.
  • 9. Arrange stuffed brinjals and cook for few minute by covering.
  • 10. Now arrange boiled surthi papdi on brinjals forming a layer. Spread a layer of Undhyu masala, arrange all the fried vegetables with masalas on the surthi papdis, arrange fried mutiys on the top, spread the Undhyu masala on the top, cover and cook for 10-12 minute, if required add little water from side.
  • 11. Garnish with fresh chopped green garlic and coriander leaves n serve.
