Method for Undhiyu – In a bowl , cut all root and vegetables in small piece and mix well. In another bowl make masala by adding finely chopped corianders, green garlic, methi leaves, ginger, turmeric powder, garam masala powder, grated coconut, salt, sugar, raisins, sesame and oil and mix well. In this masala marinate all roots and vegetables for 15 min. Stuff masala in brinjal and Rajasthani chilly. After 15 min. in a microwave safe bowl add marinated vegetable and methi balls add 1 cup water and microwave it for 6 min. After 6 min. mix the vegetables and again hot water and microwave it for 6 min. In 20 min. undhiyu will be ready in microwave.
Normally more oil is required in undhiyu but in microwave it is made with very less oil.
