1. It takes lot of effort to clean the banana blossoms and remove the unwanted parts. 2. Pressure cook the banana blossoms to make it tender.

Ingredients For Sweet potato with plantain flower/ banana blossom recipe

Methods
  • 1. Cut the sweet potatoes into cubes. Heat oil in a non-stick pan and fry the potatoes till light brown. Keep aside.
  • 2. In the same pan, fry grated coconut till golden in colour and keep aside.
  • 3. Wash and clean the banana blossoms. Chop and pressure cook with little water and salt for 2-3 whistles. Keep aside.
  • 4. Heat mustard oil and temper with bayleaf, dry red chili, cumin seeds, cinnamon, cardamom and cloves.
  • 5. Now add ginger, turmeric powder, cumin powder, red chili powder and saute with little water. Stir it till oil separates.
  • 6. Now add green chili, boiled banana blossoms, sugar, salt, grated coconut and fried sweet potatoes.
  • 7. Stir and mix well. Cover and cook on low flame for few minutes.
  • 8. Add ghee and garam masala. Mix it well. Serve and enjoy!!
