Firstly grate the paneer. In a bowl add half quantity of grated paneer, 1/4 tsp turmeric powder and a pinch of salt. Mix nicely. Make small round balls like egg yolk.

In an another bowl take remaining grated paneer, corn flour and A pinch of salt. Knead at least 2-3 minutes or till paneer becomes very smooth.

Divide it into 5-6 portion. Roll each ball In disc shape. Keep 1 ball in your palm and flatten it. Put yellow ball in the center and cover From all sides.

Roll it in your palm and give it in a egg shape. Make all paneer eggs like this.

Heat oil in a pan and shallow fry all paneer eggs on low flame. Fry till golden brown from all sides. Remove from oil and keep it in a plate. When paneer eggs cool down, cut it into halves and keep aside.

Now in a grinder Add chopped onions and tomatoes and grind. Make a smooth Paste.

In a pan heat 2 tbsp oil. Add bay leaf , cloves, cinnamon stick and cumin seed. When it's crackled add onion- tomato paste and saute.

Add green chili and ginger- garlic paste and saute on medium flame. Add turmeric powder, coriander powder, red chilly powder and garam masala powder and mix.

Add little water so that masala do not burn. Saute till it releases oil. Add water according to the consistency of the gravy you like. Boil the gravy for 8-10 minutes On medium flame.

After almost done add fenugreek leaves and mix. Remove from heat. In a serving dish pour hot gravy and place paneer eggs.

Vegetable eggs curry is ready to serve. Serve hot with rice or naan garnish with coriander leaves.
