Methods
  • 1. Boil spinach in a pressure cooker and grind it to make palak puree.Heat oil in a pan and fry paneer cubes in it until golden brown.
  • 2. Remove the paneer cubes and put cumin, when it splutters, Add bay leaf,black cardamom .When it starts to crackle add ginger, garlic and onion paste. Cook until it gets pinkish-brown in color.
  • 3. Add salt, garam masala, coriander powder along with red chilli powder. Stir till well mixed.Now add tomato puree and stir fry over medium heat.
  • 4. Add spinach and saute for 2-3 minutes.Now add paneer cubes to the mix and turn around a few times to completely mix it with the palak gravy.
  • 5. Pour some cream over, mix well
  • 6. For Matar paneer:*Blend the onions, garlic and ginger to a paste.Heat oil and add the cumin seeds and the bay leaves.
  • 7. Add Onion paste and saute till brown Add tomatoes, turmeric, salt, garam masala, red chilli powder and the coriander powder, and stir-fry till fat separates.
  • 8. Add the peas, paneer and the green chillies and saute over high heat till glossy.Add two cups water, bring to a boil and simmer for 5-10 minutes.
  • 9. Serving:Spoon the palak paneer mixture and matar paneer onto warm piece of Naan.Garnish with grated paneer and fresh coriander leaves .Serve hot
