Ingredients For Aloor Chop In Kolkata Style/Potato Fritters In Kolkata Style Recipe

Methods
  • 1. Heat little add 1-2 tsp Oil in a Kadhai/Frying Pan/wok then add the chopped garlic, minced ginger, the green chillies and the onion then fry few seconds.
  • 2. Then add the roasted cumin powder ,turmeric  powder, red chili powder,salt and saute for a minute.
  • 3. Then add the mashed potatoes ,then  mix the masala well with the potatoes. Do not fry or cook the potato any further. Add a few drops of mustard oil to the potatoes if you want.
  • 4. Let this cool.
  • 5. Make small balls of the mashed potatoes which is now spiced up with the masalas. Flatten them between your palm and place them on a lightly greased plate.
  • 6. Batter and Frying: Then in a  bowl  take the Chickpea flower/ besan/bason, rice powder(chaler guro), Turmeric powder,chilli powder, , salt ,Bi-carb of soda(khaber soda) and mix  very well, with  water to make a thick batter.
  • 7. Then the  batter should be thick yet of pouring consistency, so do not add all the water in one go. Keep adding and mixing and check the best consistency.
  • 8. The batter should be tight as it has to form a coating on the potato patties. 
  • 9. Then in a kadhai/ wok or heavy bottom pan heat enough oil for deep frying. Once the oil is hot use a serving spoon and take out a spoonful of hot oil and mix to the batter.
  • 10. Take one piece of  patato pattie, dip it into the batter to coat both sides with it, using your finger tips take it out from the batter and let the excess batter drip for a couple of minutes and then slide them in the hot oil. Keep the flame on medium and fry till both sides are golden brown. 
  • 11. Then take out and soak the excess oil on absorbing kitchen paper.
  • 12. Now your Aloor Chop In Kolkata Style/Potato Fritters In Kolkata Style is ready!! Sprinkle with a pinch of  chaat masala  and black salt on top and serve hot with tea or puffed rice(muri) great for rainy season…
