Gandharaj Mutton Rogan Josh Recipe

This is a delicious flavourful mutton curry that comes from persian origin. It is signature dish of Kashmir. In this particular recipe I used Gandharaj lemon zest and leaves, which makes this recipe more flavourful as well as unique.

Recipe Notes

1. For those who like thick gravy, add 2tbsp all-perpose flour in curd and mix it well before adding to the gravy. 2. Rogan Josh is made in a kadai over low-flame but you can cook in a pressure cooker to speed up the process.

Methods
  • 1. To begin the recipe wash mutton nicely and drain water completely.
  • 2. Marinate the mutton with 2 tsp fennel seeds, 1/2 tsp cinnamon power, 2 tsp red chilli powder, 1 tsp black paper powder, 1 tsp cardamom powder and 6 gandharaj leaves for 1 to 1.2 hours.
  • 3. Hit mustard oil in a kadai, add 2 bay leaves and other whole spices mentioned.
  • 4. After that add marinated mutton and mix well.
  • 5. Now add hing and stir well. Add almost 1 cup of water in the mutton and mix it. Now allow it to cook with lid closed.
  • 6. In a separate bowl add curd, red chili powder, fennel powder and mix it. Take off the lid and add that mixture nicely. Adjust salt as needed.
  • 7. Now add Ratan jot in oil in the mutton and cook till mutton get soft and tender. Atlast add gandharaj lemon zest and covered it with lid for 10 to 15 minutes.
  • 8. Now Gandharaj Mutton Rogan Josh is ready to serve.
  • 9. Served this delicious curry along with steamed rice and salad by the side.
