Kashmiri Chicken Recipe

Kashmiri chicken, Usually made with grounded masala and dried fruits like cashews raisins, this mildly spicy curry is sweet, creamy, rich and flavourfull. This Kashmiri chicken recipe is loaded with the rich red color,just garnish it with some fresh coriander and serve it with flat bread or rice.

Do not over cook the spices, it will ruin the taste. keep cooking in low medium flame, though it would take some extra time but the result will be worth it, the curry of kashmiri chicken will be as flavourful as it meant to be.

Methods
  • 1. First wash the chicken pieces properly and marinate with curd, 2tbs mustard oil and 1tbs kashmiri red chilli powder for one hour.
  • 2. Then heat 4 tbsp oil in a large pan. Add chicken in batches and cook until both sides turn golden brown. Remove chicken from pan. Set aside.
  • 3. Now add 4tbsp oil in the pan and add 3 chopped onions and fry until golden brown.
  • 4. Then add ginger, garlic paste and saute until aromatic.
  • 5. Now add one finely chopped tomato and saute well
  • 6. Then add all the powder spices, salt and sugar.
  • 7. Then add the cashew and raisin paste and saute the gravy well, add Little water if required.
  • 8. Now add the fried chicken pieces,and ½ cup water, cover the lid and cook until the chicken pieces are cooked through.
  • 9. Lastly add some fresh cream.
  • 10. Garnish with finely chopped coriander and serve hot.
