Wash the Basmati rice properly and soak in water for 15 minutes. After that, drain off excess water.
Now, in a heavy bottom skillet, add ghee and let it warm. Once warm, temper with whole spices. Add the cashews and raisins and fry until light brown. Next add the ginger paste and fry for a minute.
Add the green peas and saute for 2-3 minutes. Next, add basmati rice and saute gently. When the rice turns translucent, add 2 cups hot water. Season with salt and sugar. Mix gently and cover with a tight lid. Let it cook for 15 minutes till all the water is absorbed and rice is tender.
Finish off by adding garam masala powder. Mix very gently. Give it a standing time of 10 minutes. Serve hot.
