1.
Heat 1 tbsp oil in a pan and add cumin seeds , fennel seeds, asafoetida powder and chopped ginger and garlic .Then add peas or peanut and chopped green chilli then add mashed potatoes in the pan .Saute it for 2 minutes and add all dry powdered spices.

Add chopped coriander leaves in the potato mixture and saute for 1 minute. Keep the mixture aside.

In a bowl take maida , carom seeds , 100 ml oil and salt as required. Rub and mix everything with the help of hand and knead a firm dough of it. Leave the dough for 15 minutes.

Make small balls of the dough and roll it round like chapati. Cut it from the centre.
5.
Take a part and spread water in its corner and shape it as cone .
6.
Fill the potato mixture in the cone and seal it with the help of water.
7.
Deep fry samosa at medium high flame until golden brown
8.
Serve with mint-coriander chutney or tamarind chutney.
