You can use canned tomatoes also In this case,reduce the quantity of fresh tomatoes and omit water and sugar.Use the juice of canned tomatoes,instead.

Methods
  • 1. Heat oil in a broad shallow pan. On low flame, saute onion and garlic in it.
  • 2. Once they turn translucent, add tomatoes, red bell pepper and salt and saute.
  • 3. Once they trun mushy, add jeera powder and other spices and herbs. Keep stirring in between.
  • 4. Add some water, sugar. Cover and let them cook to a saucy state.
  • 5. Now with the help of a large spoon, make four small wells in the sauce and carefully crack one egg in each well.
  • 6. Cover the pan and cook for about 8-10 minutes or till the eggs become set.
  • 7. Garnish with coriander and enjoy hot with toasted bread.
