The Ultimate Mediterranean Bowl Recipe

This Mediterranean bowl os a colourful and full of nutrition. It is a complete meal in itself. Traditionally falafel is prepared using chickpeas, here I have given a my twist to the recipe and used moong beans instead of chickpeas which is easy for digestion and a good source of protein and also helping in weight loss.

Ingredients For The Ultimate Mediterranean Bowl Recipe

Methods
  • 1. Soak moong beans in water for overnight or for 8 hours.
  • 2. Now drain the water. Transfer it to a mixer grinder jar.
  • 3. Add pieces of green chilli, garlic, ginger, coriander leaves/parsaly, onion, cumin powder, pepper powder, coriander powder and tahini. Grind to a coarse paste.
  • 4. Add salt and oats flour and mix well.
  • 5. Prepare small tikkis from it.
  • 6. Pan fry the falafel tikkis until golden brown from both the sides.
  • 7. Now to prepare the salad in bowl mixing chopped red onion, chopped tomato, salt, coriander leaves or parsley and lemon juice and mix well everything. Your salad is ready.
  • 8. To prepare the hummis, soak the chickpeas overnight. Now cook it using pressure cooker.
  • 9. Now transfer it to a grinder jar.
  • 10. Add cumin seeds, salt, garlic, tahini paste, lemon juice and using little water (if required) grimd it to a smooth paste.
  • 11. Take it to a container. Sprinkle little red chilli powder on top.
  • 12. In a bowl, add portion of salad. Add falafel.
  • 13. Also add pitted olives and some hummus.
  • 14. Keep a few pieces of pita bread. Your ultimate Mediterranean bowl is ready to serve. It can be served as a complete meal.
