Ingredients For Amritsari Choley

Methods
  • 1. Add soaked chickpeas in a deep bottomed pan along with enough water to boil the chickpeas.
  • 2. Make a potli of tea leaves
  • 3. dry red chillies
  • 4. cinnamon stick
  • 5. cardamom and bay leaves in a muslin cloth
  • 6. Add this potli to the pan of boiling chickpeas.
  • 7. Once cooked
  • 8. discard the potli.
  • 9. Reserve the boiled chickpea along with its stock.
  • 10. In a kadhai
  • 11. heat ghee and mustard oil on high flame.
  • 12. Add black cardamom
  • 13. whole red chilli
  • 14. bay leaves and allow to splutter.
  • 15. Add cumin seeds and let splutter. Add the ginger garlic to a mortar pestle and crush coarsely.
  • 16. Add onions and cook till they turn brown.
  • 17. Add turmeric powder
  • 18. coriander powder and red chilli powder
  • 19. saute for 2-3 minutes.
  • 20. Add salt and mix well. Add tomatoes and cook till they turn soft and mushy.
  • 21. Add green chillies and saute for a minute.
  • 22. Now add the cooked chickpeas and cook along with the masala for 5-6 minutes.
  • 23. Mix in garam masala powder and pomegranate seeds
  • 24. mix well.
  • 25. Use the reserved stock to adjust consistency and stir. Add in more water if required.
  • 26. Cook on medium high flame until the gravy thickens.
  • 27. Once cooked turn off the flame.
  • 28. Garnish with ginger julienne
  • 29. coriander leaves and serve hot along with kulcha.
