Soft and Spongy Khaman in microwave in just 5 mins.
Twist to regular Khaman.. Tandoori Khaman on tawa ... Without tandoori.. Perfect for anytime snacks or a starter or for tiffin.

Khaman - Sieve besan in a mixing bowl. Add 2/3 cup curd, ginger paste, salt, sugar, hing, chopped chillies and 2 tsp oil. Mix well and gradually add water to make smooth flowing consistency batter.

Make sure no lumps are there. Now add fruit salt/eno and add little water on it. Gently mix the batter and immediately pour batter in the greased microwave safe bowl.

Put bowl in microwave for 5 mins on high temperature. Allow it to cool completely and demould. Cut in squares and keep aside.

Marination - Take curd in a bowl. Add black salt, coriander leaves, mint leaves, dhania jeera powder, red chilli powder, ginger garlic paste and chaat masala. Mix all well.

Heat up the oil in a small pan very well. Once hot, switch off the flame and add mustard seeds and add this to the prepared curd mixture. Mix all well.

Now take one piece of khaman. Coat very well with marination from all sides. Coat all the khaman pieces well with marination from all sides.

Heat up the non-stick tawa. Put some oil on tawa. Place all the pieces of khaman on tawa. Cook for 10-15 secs and turn. Cook from all sides for 10-15 secs. Remove in a plate and serve with coleslaw or green chutney.
