KATHYAWADI CUISINE RECIPE

This is a KATHYAWADI thali from my Village which consist of bengan ka bhartha,bajre ki rotli,green chutney ,curd and fried chillies served in bronze dinner set.,where bengan ka bharta is given dhungar too which gives a smoky flavour and bajre ka rotla is given a effect of tandoor.

Ingredients For KATHYAWADI CUISINE RECIPE

Methods
  • 1. For bengan ka bhartha, apply oil on brinjal put slit on brinjal on 2 sides and inset garlic cloves and green chillies to it .
  • 2. Then place a jali on burner and roast this brinjal on it for 5- 10 minutes and then smash it
  • 3. Do the same with tomatoes and onions and smash the tomatoes and onions too after roasting them
  • 4. Now in a pan take oil and add cumin seeds after that saute smashed onion for 5 minutes,then add smashed tomotoes
  • 5. Now saute smashed brinjal to it for 5 minutes add salt to taste
  • 6. Now add garam masala,red chilli powder, coriander powder,turmeric powder,mix all well
  • 7. Then add chopped coriander leaves 2 tbsp and chopped mint leaves 2 tbsp to it
  • 8. Then add chopped capsicum ,mix all well and then switch off the flame
  • 9. Now place live charcoal to bengan ka bhartha and cover the pan
  • 10. After 5 minutes bengan ka bhartha is ready serve it with garnish of chopped spring onion
  • 11. Now make bajre ka rotla with adding needed water to it and salt to taste
  • 12. Shape the rotla with ur hands and put it on a mud tava on low flame
  • 13. Cook it on both sides on low flame, lastly put it in burner for 2 minutes on high flane
  • 14. Serve the bajra ke rotla after removing it's upper layer ,by applying ghee to it ,or u can even keep the upper layer of rotla as it is .
  • 15. For green chutney ,crush all the above mentioned ingredients of chutney in a mixy jar and serve it .
  • 16. The KATHYAWADI thali is ready serve it with curd and fried green chillies
