Amritsari aloo kulcha with Chole ( healthier) Recipe

Ingredients For Amritsari aloo kulcha with Chole ( healthier) Recipe

Methods
  • 1. For paratha. Mix wheat flour with salt well dry then mix in warm water to make a soft dough. Leave it for ten mins. Then flatten the dough and apply half spoon of ghee and fold once then again in the outer layer apply ghee and fold it again. This layering makes it crispy.
  • 2. Rest for 5 mins and make equal size balls and roll one ball and place the stuffing inside ,pull the corners and roll again.
  • 3. Next step is to wet your fingers and stick kalonji on it. Spread kasuri methi over kalonji and cook on hot tawa. Flip the tawa over fire kalonji side facing over the fire.
  • 4. For stuffing.: Add boiled potatoes into a bowl and mash it to a buttery consistency then add all the other ingredients listed above for the stuffing.
  • 5. For chole masala : Boil 1 glass of water with tea leaves and strain it and keep aside. Now take soaked channa transfer to pressure cooker then add the tea water with chole masala chilli powder and give it a mix. Now pressure cook for 7 whistles.
  • 6. Once pressure settles add salt as per taste and give a boil for 5 mins. Now in a pan add oil jeera , saunf and onion paste with ginger garlic paste and cook till it becomes brown. Now add tomatoes paste and cook well.
  • 7. Once cooked add the flavoured channa into the pan and simmer for five mins. Serve with topped onions, green chutney, sweet chutney and hot amritsari kulcha.
