Sabz Diwani Handi ( Veg Diwani Handi ) Recipe

Veg Diwani Handi is a classic creamy, bit sweet, mild spicy gravy made with mixed vegetables cooked in Handi. Gravy is made using cashew nuts, tomatoes, onions and cream. Mixed vegetables are sauteed and then cooked in gravy. This Restaurant Style Handi Diwani tastes deliciously tasty with roti, paratha or naan.

Methods
  • 1. Gravy - Heat oil on medium flame and add cashew nuts. Roast till it turns light golden brown in colour. Then add tomatoes, ginger, garlic, kashmiri red chillies, green chilli and salt. Mix everything and cook for 3 to 4 mins. Add water, cover and cook on medium flame for 10 to 12 mins stirring occasionally. Switch off the flame. Let it cool down and grind it along with fried onions to a smooth paste.
  • 2. Veggies - Heat up water in a pan. Once it boils, add cauliflower florets along with salt and turmeric powder. Mix and blanch for a minute. Remove in a strainer and keep aside.Heat oil in a handi on high flame. Add carrots, green peas, french beans and blanched cauliflower florets. Cook for 4 to 5 mins on high, remove in a plate and keep aside.
  • 3. Sabzi - Heat ghee in same handi on low flame. Add ginger, garlic, green cardamom, bay leaf, cloves, black peppercorns and cinnamon stick. Saute for a minute and add turmeric powder, red chilli powder and dhania jeera powder. Mix and add little water to avoid spices from burning. Cook for 2 to 3 mins and add prepared gravy. Add hot water to adjust consistency. Mix and cook on medium flame for 10 to 12 mins stirring occasionally.
  • 4. Add cooked veggies. Mix and add salt if required. Cook 6 to 7 mins on high flame. Lower the flame and add fresh cream or malai, garam masala and kasuri methi. Mix and cook for a minute. Add chopped fresh green coriander leaves, mix and switch off the flame.Sabz Diwani Handi is ready to serve. Serve hot with roti, paratha, tandoori roti or paratha or naan.
